Watercress Soup

2 handfuls of fresh watercress (don’t pull out the white roots; snip the stems just above the waterline)

2 cups chicken broth

1 cup cream

Salt and pepper to taste

Chop the watercress to snippets. Put in a bowl with salt and let the juices flow. Warm up the chicken broth. Add the watercress and the juices. Stir to hot but not boiling. Add the cream. Check for seasoning and add pepper if desired. Serve warm, not hot, or set aside to cool and serve at room temperature.
